Slow Cooker Copycat Chili’s Queso

My kids love going to Chili’s Restaurant and eating the chips and dip. Recently, I started to order the queso also.

I now have them hooked on the queso!

We moved a year or so ago and do not go to Chili’s as often now, so my sister gave me this recipe to make the queso copycat style and I had to try it in the slow cooker.

This recipe is now a huge hit with with the family…and way cheaper than eating out.

Does Chili’s Queso Have Beans?

The Queso dip served at Chili’s restaurants does not have beans in it. So to keep this copycat recipe as close to the original dish we have used canned chili without beans. However, if you want beans in your queso dip feel free to use chili that has beans.

Can I Make This Chili’s Queso Dip Without Velveeta Cheese?

Processed American cheese (such as the brand name of Velveeta) is the classic way to make this queso dip. However if you want to make it without using Velveeta you can substitute 8 ounces of cream cheese plus 8 ounces of shredded cheddar cheese for the 16 ounces of American cheese called for in this recipe. Just be sure to stir the queso well once all the cheese is melted to make sure everything is incorporated well together.

Can I Add Ground Beef To This Queso Dip?

If you would like to add some ground beef to this recipe feel free to cook, crumble and drain 1 pound of extra lean ground beef and add the meat to the slow cooker when you add everything else.

  • Add all ingredients to a 4 to 5 quart slow cooker.

  • Cover and cook on LOW for 1 hour.

  • Stir the dip to ensure the cheese is melting evenly.

  • Recover and cook for 1 additional hour.

  • Turn slow cooker to the WARM setting to keep your dip warm while serving.

  • Set out your favorite brand of tortilla chips and enjoy!
